Summary

Since 1979 automatic large scale plate freezers have been successfully developed in Australia with individual capacities up to 70 tonnes per day when freezing 2,600 27.2-kilogram cartons of meat. Plate freezers for meat also open the prospect to freeze meat in moulds without cartons, thereby reducing packaging costs and contributing to a reduction in the amount of wood used to produce cartons. The combined techniques of large scale automatic plate freezing and mould freezing are suitable for many other food products and the freezing of liquids in bulk. Automatic large scale plate freezers complete with infrastruture are considerably more capital intensive than equivalent capacity automatic air blast freezers. The additional capital investment required is generally fully justified when measured against savings in energy, transport and land costs as well as improved product quality.
