Résumé

The 81 papers contained in this issue of "Acta Horticulturae" report the proceedings of this conference, co-sponsored by the IIR, held in Leuven (Belgium). It has been organised within the framework of COST action 924 of the European Science Foundation. Extract from the table of contents: predictive microbiology (modelling the effect of environmental parameters such as temperature, pH and water activity, on Listeria monocytogenes; risk assessment of Listeria monocytogenes in refrigerated acidified food products; statistical modelling of cold-smoked salmon temperature profiles for risk assessment of Listeria monocytogenes; application of modelling techniques in the food industry; determination of shelf life for chilled foods; modelling the effect of household chilled storage conditions on the risk distribution of meat products); production modelling and chain management (modelling and reduction of risk of fresh pork products: a TTI based chill chain management system; temperature variability and prediction of food spoilage during urban delivery of food products; economic evaluation of storage technologies for perishable fruit: cherries); quality modelling (the effect of relative humidity on modified atmosphere packaging gas exchange; modelling the influence of storage time on the respiration rate of shredded carrots at different temperatures under ambient atmosphere; benefits of fundamental modelling: the case of physiological disorders; modelling fruit quality in variable temperature scenarios); transport phenomena and numerical discretisation (modelling of three-dimensional heat and mass transfer during vacuum cooling of cooked diced beefs; effect of heat transfer coefficient error on freezing time estimation methods; numerical and experimental study of heat transfer in a domestic refrigerator; conserving fruits and vegetables in arid areas; mass transport properties of watermelon tissue in osmotic solutions and effect of osmotic dehydration on frozen water quality; modelling transpiration and condensation on fruit and vegetable surfaces after cooling; modelling of two-dimensional heat and mass transfer during vacuum cooling of cooked rice in tray; investigation of effects of operation parameters on cooling time and weight loss during vacuum cooling of cooked rice and cooked diced beef in tray).
