Summary
THE CONCENTRATION OF GRAPE JUICE PRIOR TO FERMENTATION ENABLES ONE TO OBTAIN PRODUCTS OF QUALITY. A HEAT PUMP OPERATING ON R114 AND APPLIED TO A CONCENTRATOR WITH TWO EVAPORATION EFFECTS WILL REALIZE THIS OPERATION. THE CONCENTRATED MUST OBTAINED IS OF EXCELLENT QUALITY. THE INSTALLATION DESCRIBED HAS AN EVAPORATING CAPACITY OF 1,500 KG OF WATER PER HOUR AND ENABLES ONE TO OBTAIN PRODUCTS HAVING A SUGAR CONCENTRATION HIGHER THAN 0. 750 KG/LITRE. A SERIES OF MEASUREMENTS HAS ENABLED ONE TO EVALUATE TO 0.120 KILOWATTHOUR, THE ELECTRICAL CONSUMPTION NECESSARY TO EVAPORATE ONE LITRE OF WATER. THIS RATIO IS TO BE APPROXIMATED TO 0.4 KG OF VAPOUR AT A PRESSURE OF 600 KILOPASCALS USED BY THERMO-COMPRESSION OF HEATING VAPOUR TO EVAPORATE ONE LITRE OF CONSTITUTION WATER.
