Summary

This guide, compiled by the NAVSA, suggests ways of ensuring hygiene control for the distribution of prepackaged fresh products via vending machines, in compliance with the principles of Directive 93/43 on the hygiene of foodstuffs. This guide examines activities such as implementing, exploiting and maintaining automatic vending machines. This guide covers all fresh products that require controlled-temperature storage. The example of sandwiches is explored as it is the most sensitive product as well as being the one that is most sold in automatic vending machines. The application of HACCP suggests methods that can be applied at all stages. These methods deal with product storage, transport to the vending machine, supply, maintenance and cleaning of the machine.
