Summary

The research presented is on the physico-chemical and microbiological characterization of fresh, packed vegetables, with or without controlled- and modified-atmosphere packaging and ionization. Air treatment of cold stores with ozone-generating devices is also studied. The products considered are sweet peppers, tomatoes, cruciferous produce (cauliflower and broccoli), lettuce (ready-to-serve), asparagus, cultivated mushrooms, onions and carrots.
