Summary

Cryoconcentrated red fruit juices were analysed, particularly their enantiomeric volatile compounds, which have been recognized as having an influence on their aromatic profile. Research on the volatile fraction was carried out and the enantiomeric ratios were thus quantified. The best techniques for analyzing volatile fractions were also examined.
