Summary

The author analyzes the interest of refrigeration in the food industry: safety, organoleptic and economic quality. He then examines the current situation in France, of the refrigerating equipment for food distribution (supermarkets, hypermarkets, refrigeration and air conditioning). Changes which can occur in consumer habits (upper limit utilization of frozen foods, progressive familiarization with irradiation in conjunction with refrigeration) are indicated. Finally, environment-related problems (ozone, greenhouse effect) that lead to important modifications in refrigerated equipment design (refrigerant, heat carrier) are summarized. Solutions to be found will have to take all these factors into account.
