Summary

The paper gives an overview of the development of temperature monitoring equipment in the United Kingdom. The increase in availability and type of instruments available for temperature arose out of changes in legislation, and the responsibility of refrigerated chain operators to ensure their food was maintained at the correct temperature. Although air temperature monitoring is the most common, other techniques such as thermal simulants, infrared thermometers and time-temperature indicators are being increasingly used.
