Temperature profiles in fixed bed freezing of foodstuffs.

Summary
The temperature profiles of the air stream, particles' center and surface are analyzed in fixed bed freezing process of foodstuffs. The problem is far more complicated than in fluidized bed freezing. Basing themselves on a large number of experiments and research works, the authors present a mathematical model and corresponding relations and diagrams, developed using numerical methods.
