Summary

Suggestions have been made to the EC Commission on various occasions that the temperature regulation of 7 deg C in the core of fresh meat should be modified in view of improved transport and chilling techniques. After evaluation of the technical literature from the point of view of hygiene and consumer protection, a change in the European Union and ATP chilling regulations, that is, postponing chilling until transport, is not acceptable.
