Résumé

This book is the outcome of a syllabus that was developed for a short course initiated in 1979. In this third edition, all chapters have been updated, many were expanded, and five new chapters have been added. Although the emphasis is on current postharvest technology for fresh fruits, vegetables, and ornamentals in California, all the principles discussed are applicable to postharvest handling of fresh horticultural crops worldwide. Thirty-eight chapters are included on the following topics: various aspects of postharvest technology of horticultural commodities; postharvest handling systems for certain commodities or commodity groups (a summary table of optimal storage conditions for most fruits and vegetables is included in the appendix); sources of information, overview of the fresh produce industry, consumer issues, processing methods, and extension efforts.
