Summary
Aquaculture products need special attention both during pre-harvest and post harvest stages. Quality of the product and freshness are important criteria to improve its marketability, and hence require careful handling. The paper describes several methods: the ultra-low temperatures for air transport of fish without water, methods for value added products, molluscs and crustaceans.
