THE AVERAGE COUNTS IN FROZEN GROUND BEEF WERE AS FOLLOWS: TOTAL BACTERIA: 60 MILLIONS ; ENTEROBACTERIACEAE: 2 MILLIONS ; PSEUDOMONADACEAE: 400,000 ; LACTOBACILLACEAE: 400,000 ; FAECAL STREPTOCOCCI: 10,000 ; COLIFORMS: 500 ; E. COLI: 100 ; MOULDS: 6,000 ; YEASTS: 4,000. WATER ACTIVITY, PH VALUES AND SODIUM CHLORIDE PERCENTAGES IN FROZEN GROUND BEEF AND < KOFTA > WERE 0.977, 5.9, 0.4 AND 0.972, 5.8, 1.5 RESPECTIVELY. THE RELATIONSHIPS BETWEEN WATER ACTIVITY, PH AND SODIUM CHLORIDE PERCENTAGES AND MICROBIAL QUALITY WERE DISCUSSED.
